Ingredients
150g Long Grain Rice
1 Medium Red Onion
2 Cloves Garlic
100g Mushrooms
1 Medium Leek
½ Red Pepper
½ Yellow Pepper
1 Medium Courgette
3 Stick Spring Onion
400g Tinned Chopped Tomatoes
600ml Vegetable Stock
150g Vegetarian Mince
2 Tbsp Olive Oil
1 tsp Thyme
1 tsp Paprika
Salt & Pepper to taste.
Instructions
1. Fry red onion, garlic and the mince in olive oil until the mince is browned.
2. Add the courgette, yellow pepper, red pepper and leeks. Mix well for 5 minutes.
3. Add black pepper, paprika, thyme and salt. Mix well.
4. Add rice, tinned tomatoes and vegetable stock. Cover and cook for 10 minutes.
5. Mix frequently.
6. Add mushrooms and mix well.
7. Cover and cook for another 5 minutes.
8. Garnish with spring onions.
