How To Make Coconut Rice Vegetarian Recipe

Ingredients

2 tbsp Olive Oil
1 Medium Onion
1 tsp Turmeric Powder
3 Bay Leaves
1 Stick Cinnamon
150g Long Grain Rice
1 cup Coconut Milk
600ml Vegetable Stock
2 tbsp Soy Sause
50g Cashew Nuts
3 Stick Spring Onion
Salt and Pepper to Taste


Instructions

1. Heat the olive oil
2. Add in the onion
3. Stir-fry for 2 minutes or until browned
4. Add in the turmeric powder, pepper, salt, cinnamon and bay leaves and mix well
5. Add in the rice and coconut milk and mix well
6. Add in the vegetable stock and mix well
7. Cover and cook for 20 minutes
8. Add in the cashews and soy sauce and mix well
9. Garnish with spring onions
