Oaty Pancakes with Caramel Banana

Ingredients - Pancakes

75g Plain Flour

50g Porridge Oats

1 tsp Baking Powder

Pinch of Salt

25g Caster Sugar

1 Egg

1 tbsp Sunflower Oil, plus extra for frying

250ml Semi-skimmed Milk

Serves 7-8

Ingredients - Caramel Bananas

50g Butter

1 tbsp maple syrup

3 bananas

25g Walnuts

Serves 5

Instructions - Pancakes

     1. In a mixing bowl, combine the plain flour, porridge oats, caster sugar, salt, baking powder, egg, oil, and milk and combine thoroughly to create the pancakes.

  

     2. Heat a lightly greased frying pan and use 2 tbsp batter per pancake. Cook for 3 minutes on each side, or until golden. Keep warm while you finish the last 7-8 pancakes.



Instructions - Caramel Bananas

     1. Melt the butter in a frying pan, then add the maple syrup and whisk thoroughly. Combine the walnuts and bananas and mix well.

     2. Cook for 4 minutes, stirring once, or until the bananas soften and the sauce caramelizes.

     3. To serve, stack two pancakes on each plate and top with caramel bananas and walnuts.
