How To Make Mushroom Risotto Mushroom Risotto Vegetarian Recipe

 


Ingredients
1 medium Courgette, sliced thinly 1 medium Onion, chopped 100g Mushroom, chopped 50g Butter or Margarine 50g Pine Nuts, toasted 600ml Vegetable Stock 200g Long Grain Rice 100g Frozen Peas Salt & Pepper


Instructions
1. Brown the nuts in a dry frying pan, turning them frequently 2. Melt the butter and sauté the onions and mushrooms for 5 minutes 3. Add rice, stock, and the seasonings 4. Reduce heat 5. Bring the mixture to a simmer 6. Cover and cook for 10 minutes 7. Lay the vegetables over the top of the rice and cover 8. Leave to steam for a further 10 minutes 9. Add more water if it begins to dry out 10. Sprinkle with pine nuts and parsley
